Pardubice town is used to be called "the city of Ginger-Bread" and local people are simply ginger-bread-people.
What exactly Ginger-Bread is? And what it meant in the past and mean at the present for Pardubice? Honey based baked goods seam to be as old as human being so far. Ginger-Bread (originally called Pepper-bread) is a sweet baking prepared with a honey, flour and a pepper. Right because of pepper it was initially called Pepper-Bread.
Archeologists found simple bakings made of flour and honey in the Egyptian graves. In the times of the Antique, Ginger-Bread used to have a symbolic and a solemn meaning. Time passed by and gourmets were making ginger-bread better and better by adding a new flavourings. Technological progress brought its good as well and today we can choose among lots of basic kinds of Ginger-Bread reciepes including many forms, tastes and smellings.
The firtst ever written notice about Ginger-Bread in Bohemian countries comes from 1335. It meantions ginger-bread bakers from Trutnov. In Prague they were earlier. Supposedly it was before 1324. Perhaps from Norimberk or Italy. They called themselves "caletníci" and since 1348 there is a street having their name - Celetná street (Caletná). Archive materials talk of a fist Pardubice Ginger-Bread baker in 1515. Ginger-Bread guild already was in existence in the times of "Vilém z Pernštejna" .
Ginger-Bread makers were almost killed by Hussites. These virtuous people did not like the populace to play dice for the Ginger-Breads. The first kinds of Ginger-Bread were simple thin oval cakes and also Ginger-Breads made by filling the pastry moulds. Till the 16th century there were only pastry moulds made of baked clay. Later they were changed for wooden ones, often heavily carved. The most favourite wood material was a pear tree, but there are many of those which survived until these days made of a cherry tree, a plum tree, a linden tree or a beech tree. Cutted out Ginger-Breads of plenty shapes appeared recently.
The fame of Pardubice Ginger-Bread has quite young history. In the middle ages and during the 19th century Pardubice Ginger-Bread bakers were seen as an average ones. Until the 1st half of the 19th century there were only honey Ginger-Breads baked by filling the pastry moulds.
Famous became Pardubice Ginger-Bread with a modern factory manufacturing and a massive sales campaign in the 1st quarter of the 20th century. In the years of the 1st republic Pardubice became probably the biggest producer of the Ginger-Bread in the country and its goods were exported even to Mexico. There were a few factories in those times manufacturing Ginger-Breads. They were incredibly emloying 2000 of people. To compare, it was as much as a Fantoma factory (Paramo today) emloyed.
These days, Pardubice Ginger-Bread is defined as a baking goods made of wheat flour, sugar, egg, bee honey, fruit jams, vegetable fat, cocoa, Ginger-Bread flavouring spice (ginger, coriander seed, clove, aniseed, allspice) and baking agents.
Pardubice Ginger-Bread is a trade mark of Euroean Union and its manufacture is delimited by a cadastral area of the Pardubice town, including cadastral area of the Spojil village.
